Enjoy a Couple of old recipes mode: 1960s, tomato, onion and Cheese Casserole - Soda Cracker pie

Enjoy a blast from the past in your own kitchen. I have taken two recipes of my large collection of old recipes that I have collected friends, former colleagues, former neighbours and very old books of cuisine over the years. I also inherited files of recipe and cookbooks from my mother, grandmothers, aunts, cousins, etc. I am concerned that some of these wonderful old recipes will be extinct, so I like to share them in the hope that others who make them for their families, too. By sharing these old recipes, I discovered there are many more of you out there who collect, too. I often visit your blogs and I know that many of you visit mine. We will keep these old recipes! For a delicious dish aside with your next meat dish, try the tomato, onion and Cheese Casserole. Surprise your family and friends with soda Cracker Pie for dessert. It is really very good.

1960s tomato onion & cheese CASSEROLE

It is an old recipe that I have had since early in my marriage. With onions and tomatoes becoming more abundant than we head "garden season" I thought that this would be a good time to share this recipe.

1 lb (4 cups) thinly sliced onion
2 lb (4 med) ripe tomatoes, peeled and sliced
1 tsp salt
1/2 tsp pepper
1/2 tsp. dried Basil
slices of American cheese melted, 5 halved
1/2 cup dry bread crumbs
3 tablespoons butter, melted

Preheat oven to 350 degrees.

Lightly grease a casserole of 1 1/2 to 2 - pint; set aside.

In a saucepan, bring 1 inch of water to a boil, add the onion and cook over medium heat for 10 minutes. drain.

In the casserole prepared layer halved tomatoes and then half onions. Combine salt, pepper and Basil; Sprinkle half on onions. Top of the page with half of the cheese. Repeat with remaining tomatoes, onions, spices and cheese.

Stir the bread crumbs in the melted butter. Sprinkle on the upper part of the pot.

Bake, uncovered, in an oven at 350 degrees for 30 to 35 minutes.

Yield: 6 servings

SODA CRACKER PIE

3 egg whites
1 cup nutmeats (walnuts, pecan or hickory *)
7 soda crackers
1 tsp baking powder
1 cup of sugar

Beat egg whites until they stand in stiff peaks. Roll soda crackers in a meal very. end add the powder to pulp. Integrate this mixture of egg whites, add nutmeats. Pour into a well greased pie pan 8. Bake for 35 minutes at 350. Garnish with whipped cream or cream to be used.

* This is an old recipe of Southern Indiana. In Southern Indiana, we have nuts hickory our Hickory in the fall. We usually serve as substitutes of pecan since it required purchase Pecan it.

Note: In the "old days" that my children and grandchildren say our soda cracker came in large leaves with 4 crackers today together and we broke. Therefore 7 crackers when this recipe was written would today 28 of our crackers.
